I may slightly confused as to what the situation is exactly so if what I tell you doesn't work please re explain the problem. As I understand it you are changing the text in the Website PSD when what you should be doing is changing the text in the image JPG. Open the image JPG and change the text in there. Once complete simply resave the image and replace the original. The easiest way to save a JPG image is through the file menu - file > "save as" - (Ctrl + Shift + S shortcut). Once you replace the original image it should look fine...
